The short answer
Start with a dry surface and an even, not muddy, seasoning layer. Run a clean fire with useful airflow, leave the lid closed, and give the surface time to become dark, dry-looking and firmly attached. Wrap only after that happensโand only when the cook needs it.
Color, feel and adhesion tell you more than one internal temperature.
Add a light mist only when a dry area needs help. Never wash the rub away.

The surface system
Bark is the seasoned, smoke-darkened, dried exterior that forms during a long cook. It is not one ingredient and it is not just burnt rub. It develops as several slow surface changes overlap.

Clean smoke deposits color and flavor compounds on the slightly tacky exterior. Heavy dirty smoke adds bitterness, not better bark.

Before you wrap
Internal temperature is a checkpoint, not permission to wrap. Check the exterior first.
Deep mahogany to dark brown or black, depending on the rub, smoke and meat. Dark does not automatically mean burnt.
The exterior looks dry or matte rather than shiny, wet or muddy. Small areas of rendered fat are normal.
A very light fingertip touch does not pull away a paste of rub. Do not scrape, pinch or repeatedly handle it.

Change one variable at a time. A great surface comes from balanceโnot piling on more rub, more smoke and more sugar at once.
Use an even layer with enough texture to create structure. Coarse black pepper and granulated spices give the surface edges and gaps.
Pat the meat dry before seasoning. During the cook, moisture helps smoke cling early, but a continuously soaked surface cannot set.
Clean combustion adds pleasant smoke character and color. Dense, stale or harsh smoke can turn a beautiful dark bark bitter.
Air movement carries heat and smoke across the meat while helping surface moisture escape. Choked airflow slows the set and dirties the fire.
Moderate pit temperatures build bark efficiently without dragging every cook all day. Higher heat needs less sugar and closer color control.
The surface needs uninterrupted time before a wrap, pan or sauce changes the environment. Opening the lid resets momentum.
Cut-specific strategy
The same surface rules apply everywhere, but fat, thickness, shape and total cook time change the best approach.
Brisket gives bark a long development window, but the thin flat can dry while the point remains forgiving. Trim hard waxy fat and round thin edges so the surface cooks more evenly.
Pork shoulder is forgiving and full of seams, folds and exposed muscle that collect seasoning. Those irregular surfaces create excellent bark, but deep valleys can hold liquid and stay soft.
Plate ribs can handle assertive pepper, oak or hickory and a very dark exterior. Their thick meat and long cook give you time, but a heavy fat layer can block seasoning and smoke.
Ribs build color quickly and are easy to oversoften in a long, wet wrap. Sugar-heavy rubs and sauces also scorch sooner than a simple savory rub.
Chuck can deliver brisket-like bark on a smaller budget, but its higher surface-to-mass ratio means it can dry faster. Watch exposed edges and do not delay the finish just to chase a darker crust.
Cooker-specific strategy
Heat direction, airflow and humidity differ by cooker. Use the same bark test, but change the setup.
A small, clean-burning fire and open exhaust create the moving heat that builds a dry, attached exterior. Place the thickest or fattiest section toward stronger heat and rotate only when the cooker demands it.
Pellet cookers often run with gentler smoke and convection. Bark can still be excellent, but unnecessary water, crowding and repeated spritzing can keep the surface soft.
Charcoal provides the heat; wood chunks provide deliberate smoke. On a kettle, position the exhaust so heat and smoke travel across the meat. In a kamado, make tiny vent changes early because the cooker responds slowly.
These cookers can build bark efficiently because the meat sees both hot air and radiant energy from below. The bottom or fire-facing side may darken first.
These cookers are easy to run but may have gentler airflow. Too many wood chips, a closed vent and a full water pan can create a damp, stale environment.
Choose the tradeoff
There is no universally best method. Choose based on how much bark, moisture, speed and protection the cook needs right now.
Strongest exterior and longest exposure, with the least protection from drying or darkening.
Reduces evaporation while allowing some moisture to escape. Bark softens less than it does in sealed foil.
Protects the bottom and catches juices while leaving the top bark open to the cooker.
Traps the most steam and speeds the cook, but softens bark fastestโespecially with added liquid.

Save what you can
Fix the environment first. Then decide whether the meat has enough time and moisture left for the surface to recover.
Confirm the grate temperature and airflow. Stop routine spritzing, leave the lid closed and let the surface keep developing before wrapping.
When tenderness and timing allow, unwrap and return the meat to clean, moderate heat until the surface firms. Watch thin edges closely.
Move pooled fat, rotate away from a strong hot zone and stop touching weak areas. Do not paste more rub onto a wet, half-set surface.
Stop spritzing and do not brush the surface. Give the existing layer time to dry. Use a pan or wide spatulas when moving the meat.
Move away from radiant heat, check for dirty smoke and wrap or shield the exterior if the meat still needs time. Do not wait for actual burning.
Open the exhaust, improve combustion, remove smoldering wood if safe and avoid adding more smoke. A dark bark can be excellent; a harsh smell is the warning.
Clear the smoke

Straight answers
It is the dried, seasoned and smoke-darkened exterior of smoked meat. Spices, meat proteins, rendered fat, smoke compounds, heat, airflow and time all contribute. It is not simply burnt seasoning.
Use an even coarse rub, run clean smoke with open airflow, avoid keeping the surface soaked and give the brisket enough time unwrapped. Pepper and smoke can create very dark color without relying on heavy sugar.
