The safest temperature, the best texture temperature, and the temperature where you remove the food are not always the same number. Understanding the difference is what turns a basic chart into a repeatable cooking system.
Safe Minimum

Texture Target
The range where fat renders and connective tissue softens. Brisket and pork shoulder need to cook well past the safety minimum to become tender.

Where to Place a Meat Thermometer
A perfect thermometer reading from the wrong location is still the wrong answer. Find the coolest part of the thickest edible section without touching bone, a fat pocket, the grate, or the pan.
Measure the part that takes longest to heat, not the thin edge that finishes first.
Bone and fat transfer heat differently and can create a misleading local reading.
Large cuts such as brisket, pork shoulder and whole poultry rarely cook evenly from end to end.
Side entry places the thermometer tip in the center of a thin patty instead of passing through it.
The sensing area is near the tip on most instant-read thermometers. Move slowly through the center to find the lowest stable reading.
The Cook Continues After the Heat Stops
Carryover Cooking and Resting
Heat stored near the exterior continues moving toward the center after food leaves the cooker. The hotter the cooking environment and the larger the cut, the more carryover can matter.
Burgers, thin chops and chicken pieces usually carry over less. Check close to the target and rest briefly before serving.
Thicker cuts hold more heat. Pulling a few degrees early can help the center land at the intended final temperature.
Brisket, pork shoulder and whole turkey can continue changing significantly. Resting strategy, wrapping and holding temperature all matter.

Most thermometer problems are placement, timing or interpretation problemsโnot equipment failures.
Bone can create an unrepresentative reading. Reposition into the surrounding meat.
Large cuts cook unevenly. Confirm the thickest and coolest areas before calling the cook finished.

Limit the time perishable food spends in the temperature range where bacteria can multiply rapidly.
When holding brisket, pork shoulder or other cooked food, use equipment and methods that keep it safely hot.
Check more than one spot in dense casseroles or large containers so the center is fully reheated.
Wipe or sanitize the stem after checking raw or partially cooked meat before using it on finished food.

What temperature should chicken and turkey reach?

What temperature is a burger done?
Ground beef should reach 160ยฐF. Insert an instant-read thermometer from the side so the sensing tip reaches the center of the patty.
What temperature is pulled pork ready to shred?
Pork shoulder commonly becomes pull-apart tender around 195โ205ยฐF, but the final test is probe tenderness and whether the bone releases cleanly. The exact finishing temperature varies by cut and cooker.
Is brisket always done at 203ยฐF?
No. Around 195ยฐF, begin checking the flat and point for a probe sliding in with very little resistance. Some briskets finish below or above 203ยฐF.
Can I tell doneness by color or clear juices?
No. Color and juices can be misleading. Verify the internal temperature with a reliable thermometer.
Why does my leave-in probe disagree with my instant-read thermometer?
They may be measuring different locations. The leave-in probe tracks one spot; the instant-read can scan several areas. Reposition carefully and use the lowest stable reading from the thickest edible section.
How do I know whether my thermometer is accurate?
Follow the manufacturerโs calibration or accuracy-check instructions. A basic ice-water check can reveal an obvious offset, but use the procedure specified for your thermometer.
Should I cook BBQ by time or temperature?
Use time to plan, temperature to track progress, and tenderness or texture to confirm the result. Time alone cannot account for meat thickness, weather, cooker recovery or temperature swings.
