Wrapping Changes the Equation
Wrapping is one of the biggest reasons two cooks at the same pit temperature can finish on completely different schedules. Foil, butcher paper, a foil boat and no-wrap cooking all change evaporation, bark and cooking speed.
Tight foil traps steam and limits evaporative cooling the most, so it can move a stubborn cook forward quickly.
