START WITH THE BURNERS
Heat, Surface & Burner Control
A griddleโs heat starts at the burners, but the steel cooking surface determines how that heat spreads and reaches the food. Burner settings, preheat time, wind and the amount of cold food added at once can all create hot spots, cool zones and sudden temperature changes.

Burners Set the Heat
Each burner controls a section of the cooking surface. Higher settings create stronger heat, but running every burner at maximum can overheat the griddle, damage seasoning and leave you without a cooler zone for controlling the cook.

The Burner Is Not Breathing Correctly
Healthy propane flames are generally steady and mostly blue. Yellow, lifting or uneven flames can indicate blocked burner ports, restricted air intake or a burner that is not seated correctly.
